Suzie Q’s Three Way Coco Crazy Granola

Preheat the oven for 280 degrees, or 300 degrees if you’re in a real hurry.
Mix these dry ingredients together in a big bowl:
- 4 cups old fashioned oats
- 3/4 cup oat bran
- 3/4 cup wheat germ
- 1/2 cup chopped walnuts
- 1/2 cup sliced almonds
- 1/2 cup chopped pecans
- 1/2 cup pumpkin seeds or sunflower seeds
- 1/2 cup unsweetened coconut flakes
- 1/2 cup unsweetened shredded coconut
- 1½ tsp salt
In a double boiler, mix this warmed oil mixture:
- 1/4 cup brown sugar
- 1/4 cup maple syrup
- 1/2 cup honey
- 1/2 cup coconut oil
- 1/2 Tbsp cinnamon
- 1/2 Tbsp Vanilla extract
- 1/2 cup dried cranberry
- 1/2 cup golden raisins
- 1/2 cup sliced dried dates, apricots, figs – whatever you got
Add warmed oil mixture to the dry ingredients and toss until fully mixed.
Spread onto parchment lined cookie sheets (you may also use silicone sheets). I use two cookie sheets to create a thin layer of granola, better to toast the oats and nuts.
